Mozzarella & Cheddar Science
Pick the right cheese for the job. Knowing how mozzarella and cheddar are made explains why they behave so differently in the kitchen.
How both start
- Both cheeses begin with milk, cultures and rennet to form curds.
- The way curds are treated after they form is what makes each cheese unique.
Mozzarella: stretched-curd, fresh and melty
- Mozzarella uses a stretched-curd method called pasta filata. The curd is heated and pulled until it becomes smooth and elastic.
- The result is a high-moisture cheese that melts evenly and gives that stretchy pull you see on pizza.
- Because it’s fresher and wetter, mozzarella keeps a mild, milky flavour and works best hot (pizza, bakes) and cold (salads) where a soft texture helps.
Cheddar: pressed, aged and flavourful
- Cheddar follows a process called cheddaring: curds are stacked and turned to drain whey, then pressed into blocks and often aged.
- Aging concentrates flavour. Young cheddar is milder and more flexible. Older cheddar is firmer and sharper.
- Cheddar melts well when young or mild. Aged cheddar adds stronger flavour but can be drier and may break or separate when overheated.
What affects melt and texture
- Moisture: more moisture generally means smoother melting and more stretch.
- Fat and protein structure: these determine how the cheese holds together when heated.
- Acidity and aging: more acid and longer aging change the protein network and the flavour, and can make the cheese less stretchy.
Cooking tips
- For gooey stretch, use a good mozzarella on hot dishes and avoid overcooking.
- For flavour, add some grated cheddar—young cheddar melts smoothly; older cheddar brings sharpness.
- When combining cheeses, balance moisture. Pair a wetter mozzarella with a firmer cheddar for flavour without excess oil.
- Grate or slice cheese cold for easier handling and more even melting when cooked.
